The art of keeping food fresh, tasty and healthy is about to get a whole lot cooler, with BOC set to display its state of the art CRYOLINE CS spiral freezer at FoodPro in June.
Part of BOC’s ongoing commitment to progressive product development, the CRYOLINE CS is a new generation of spiral freezer assisting the Australian food industry keep costs down whilst improving yield and maintaining the highest levels of food quality.
Market Manager, Food & Beverage at BOC, Jon Hawton, said achieving desirable food products was becoming increasingly challenging due to rising consumer demand for safer and more appealing food choices.
“To fulfill these requirements chilling or freezing is the preferred preservation method to increase shelf life and maintain food quality,’’ he said.
“The CRYOLINE CS provides compact design and high capacity. It uses vertical height instead of linear floor space to achieve large volume output within a small production floor space.
“Cryogenic gas is the powerful coolant used in the CRYOLINE CS to achieve rapid heat exchange. This rapid freeze ensures lower product yield losses than other slower and higher‐temperature freezers,’’ he said.
The CRYOLINE®CS is the first cryogenic self‐stacking spiral freezer. The self‐stacking design reduces the mechanical maintenance typical with other freezers and belt‐driven systems while satisfying the highest hygienic standards.
The spiral acts as a heat exchanger, in which the cryogen is sprayed directly onto the product, thus efficiently extracting heat from it.
The cold cryogenic gas is circulated at high velocity and extracted with the exhaust system at controlled set‐points to maximise rapid and efficient heat transfer.
The automatic exhaust control monitoring system in the CRYOLINE CS ensures that the gas is fully utilised before leaving the spiral, keeping gas consumption and running costs low.
Mr Hawton said that the CRYOLINE CS was suitable for freezing a wide range of products including meat patties, whole fish or fish fillets, pies, ice cream, pastries, pizza and ready‐made dishes.
The freezer will be on display at the BOC stand at FoodPro 2014 being held at the Melbourne Convention and Exhibition Centre from June 22‐25.
